Method # 1
(makes strong vanilla sugar)
1 whole vanilla bean
1 lb. granulated sugar
Mix well in a blender and store in a tightly sealed jar. Mix in extra sugar if it too strong for your taste.
Method # 2
Pour enough sugar to fill a jar into a bowl.
Cut a vanilla bean lengthwise, and scrape out the inner part with a knife. Combine the scapings and bean shells thoroughly with the sugar, and then store in a tightly sealed jar for at least one week before using. The bean shells can be reused many times with new batches of sugar.
