How to make Raspelberge from Our favorite Cakes and Cookies By Claudia Baumann from Germany

Combine and mix well for 2 min.

  • Dough: 2 eggs
  • A pinch each of coriander cinnamon cardamon
  • 2/3 C sugar
  • 1 T vanilla sugar

4 C coconut flakes — beat into spice mix

Drop by tablespoonfuls 2 in. apart onto ungreased baking sheet. Bake at 350F for 15 min., one baking sheet at time.

Cool on wire rack.

Optional: Dip cookies in melted chocolate (I like 60% cocoa) as shown, and let cool on wax paper.
